My husband and I work opposite hours, so our meals are separate, it has been so complicated trying to create a healthy meal plan for both of us, that is not time-consuming or expensive. During this challenge we discovered a step up to meal planning. We each choose two meals that are healthy and can be cooked ahead, we cook them all on Sunday and place in containers. Then each day/night we have healthy good meals just waiting to be heated up. It was cheaper to buy the fresh vegetables and protein for the 7 cook ahead meals that it ever would be for a delivery; and we saved so much in other ways, no cardboard from pre-packaged meals, no gas for deliveries, no Styrofoam or plastic. Most of all we feel pretty amazing about this change.
