Before the Eco Challenge was announced, I signed up for the WWF Earth Hour Virtual Run 2023 and committed to finish 60km for one month. I have not been very active physically during the pandemic and I needed a boost, so I signed up. I added this to my Eco Challenge actions so I am reminded every day. Today is the last day. I will miss the daily check-ins and the fun banter we have in the office, us challenging one another to complete our daily commitments. I made air-fried taro root fries. We usually use taro root for soup recipes so I checked for other recipe. I am happy it can be a substitute for potato fries since it’s also starchy and sweet.
