We watched The Year Earth Changed, which showed how the Earth was able to breathe and nature re-establish itself during the year of lockdown. It was amazing to see the impact that that much less pollution, noise, and people was able to have on the world in just one year, and to think of all that we could have done to keep that impact going.

My wife and I made a vegan "ahi tuna" bowl, which used grilled and marinated watermelons in place of ahi tuna. We also had a homemade "mayonnaise" made out of cashews, sriracha, lemon juice, water, and soy sauce. Other than having a slight crunch, the watermelon really did look/feel/taste like ahi tuna, and the meal was delicious!
