    Having missed day 1, despite a reminder from our team captain, I had a lot of catching up to do on my daily challenges, doubling the time I spent learning about water justice, low carbon diets, etc. And spending 30 minutes in nature on a cold, rainy day was a challenge, but I managed by sitting on the front porch with my Merlin bird app. My favorite resources so far were all connected to the low-carbon diet challenge. The Environmental Working Group has some wonderful information.

    I am mostly vegetarian, so I'm already on the road to a low carbon diet. The one food I still have trouble leaving behind is cheese. I would love to know some really satisfying substitutes; nutritional yeast only goes so far.
