April 15 at 12:37 PMOn this day, I went to a fully vegan restaurant and got cauliflower tacos. It was so good and very interesting, as I was a little apprehensive, but I went all in! I enjoyed it, and also got a chai tea with almond milk.

April 15 at 12:36 PMOn this day, I was particularly involved with picking up trash! In Sioux Falls, there's a lot more litter in our parks than people think, caught in fences, alongside rivers, etc. I think everyone should be involved in a task like this since the reward is so high and fulfilling for yourself.

April 15 at 12:31 PMAnxiety can be very debilitating in a world where we hear a lot of bad news, and the largest impact that I have taken is going on a walk to clear my mind and give me something to physically focus on.
-
April 15 at 12:30 PMNot only did I take a shorter shower, but I tried to take a fully cold shower because of the benefits, and because I just dyed my hair! I found it very invigorating as shocking as it was. Other water practices I can incorporate include being mindful of how much water I use when doing dishes and making sure to shut it off when washing a dish.

April 15 at 12:28 PMI think the ecochallenge will be interesting to complete now that I can do more outdoor tasks as the weather is getting warmer!
-
April 15 at 12:27 PMI learned about water resilience trackers while scrolling through articles and found their framework interesting. Understanding water consumption is important so we can make effective change and influence policy.
-
April 15 at 12:25 PMPersonal strengths of mine that have helped me adapt to a past challenge include patience in a multitude of situations, which can also be beneficial in future challenges I face.
-
April 15 at 12:22 PMI think the EcoChallenge 2026 is going very well, and even though it is a bit hard to keep up daily, it is very fun and interesting to see my other classmates' posts.

April 15 at 10:57 AMI spent this time noticing my own resilience. We all have different battles we are facing some larger than other but giving myself the time to notice my ability to build after some very impactful hurts has given me more courage to continue to move forward with my head held high.

April 15 at 10:54 AMToday we enjoyed black bean burgers. I was initially skeptical, but they were AMAZING.
