Reduce Animal Products
One kilogram of beef and cheese emits 71kg and 24kg of greenhouse gasses, while 1kg of rice, grains, and legumes emits between 2-4kg. Fruits, vegetables, and nuts emit less than 1kg per 1kg. I will reduce my climate impact by enjoying 2 meatless meals and/or 1 vegan meals each day this week.

One third of all food produced worldwide is wasted, and so is the energy it takes to produce and transport that food. I will reduce food waste and save money by planning a weekly menu, only buying the ingredients I need and eating what I planned each day.

Trees capture carbon and produce oxygen that is essential to life on earth. I will support this important piece of nature by organizing or joining a community group to plant 2 native trees in my community, public parks, office location, campus or backyard.

REFLECTION QUESTIONClimate + Air Declutter My Home Without the LandfillHow did it feel to intentionally declutter with putting things into the landfill? What did you learn along the way about yourself and our consumer and waste systems?
Marissa Zebold 4/30/2024 3:34 PMI love being able to donate back to my community when decluttering my own home. Within my neighborhood, there are several homeless shelters and groups that consistently post about the items they are needing. It was helpful to look through their list, and then go through my items to see if there was alignment. I ended up donating bedding, beach towels, kitchen utensils, and raingear! -
Marissa Zebold 4/30/2024 3:32 PMThis was a fun accountability challenge for me (especially since several of my goals revolved around meal planning and consuming meatless or vegan meals). I enjoyed checking in on the daily and marking the amount of meals I prepped to reduce waste, and how many vegan meals I was able to incorporate into my week! It felt really encouraging to see the actual numbers. -

Marissa Zebold 4/17/2024 5:49 PMWe planted a bunch of yarrow in our yard this past weekend. Not only is it great for pollinators, but it is also great for keeping the soil hydrated, healthy, and functions as a good covercrop. It's not popping up quite yet, but I'm excited for it to grow alongside our lettuce, arugula, and other leafy veggies that don't like dramatic soil temp changes. We also seeded sunflowers in our front yard! -
REFLECTION QUESTIONClimate + Air Weekly Meal PlanningHow did it feel to plan out your meals and stick to them in an effort to reduce food waste?
Marissa Zebold 4/12/2024 11:52 AMMeal planning this week went great! We have been cooking most of our dinners at home, and making enough that we have leftovers for lunch the next day. By planning to eat something we made for 2 meals instead of 1, I find that it is much easier to eat healthy and consciously the following day as well. Especially since we are making more protein heavy vegetarian meals (which can often take more time) it makes it so easy to eat vegetarian the next day at lunch!
We have also been experimenting with different versions of overnight oats and homemade granola, which is letting us reduce the amount of added substances in our foods. -
REFLECTION QUESTIONLand + Forests Plant TreesHow is planting trees good for your mental, physical, and spiritual health?
Marissa Zebold 4/11/2024 5:37 PMToday, we obtained an Oregon grape tree/bush from a neighbor who got an extra one at a pop-up she went to last weekend. She posted it on our neighborhood buy-nothing FB page, and I jumped at the opportunity. I recently learned that this is a native species to our area, and will help with attracting pollinators. It's happily planted in our backyard!-

Marissa Zebold 4/01/2024 11:32 AMI'm looking forward to starting this month's eco challenge, especially since I'm really focused on eco-friendly gardening methods featuring lots of native plant species, pollinators, and producing foods that will cut down our food-purchases and packaging waste while encouraging us to eat a vegan diet. I've done a lot in the last month to prep my garden and compost system, so I'm hoping new practices in my own backyard will tie into the challenge-prompts!
