    This week, I've tried to sneak in more fruits and veggies into my meals. Last night's salad had the addition of blueberries, dried cranberries and a few more nuts and seeds. Excited to see that some farmers markets are starting again!

    Tried more avocados, salads, greens added to my savory oatmeal, and batch cooked a bunch of fajita veggies for the week!

    I notice when I'm making lunch to take to the office, I reach for the take out plastic containers (the taller soup ones) that we've accumulated. Glass can be heavy so I've been using a bento box from a local culinary store and want to research getting a bulk qty of BPA-free and heat-resistant plastic containers to use.

    Part of me wants to get rid of all our containers (glass and plastic) since some lids are missing or I have lids but no container and just start all over!!

    I wanted to be mindful on my walk yesterday so I didn't bring my phone with me. When I got to the park, I saw the biggest bald eagle I've ever seen hanging out on top a of a tree. I took a few minutes to look at it and then continued on my walk. It was so cool to be that close but I'm bummed I didn't get a photo! As I was making my way back around my loop, the eagle was still there, just chilling. More folks had gathered around and there were a few photographers there as well. It felt like a little blessing to see that eagle and it made my day :)

      I love this, Kristi! Existing without the tech is tricky these days, but you'll have that memory which may be better in the long run that a pic on your phone that in 2 weeks you just scroll past forgetting how majestic it actually was! I've been trying to cut way back on screens myself, so high-five for making great strides!

    It's been a little cold here in CO so my time outside yesterday was broken up into smaller segments.

    When I read about social and environmental justice issues affecting Black, Brown, Indigenous and other non-white communities, it brings up a lot of feelings. I get angry at how racist indifference is often at the root of of these injustices and then I get sad for these communities, especially for my fellow Natives. But I know I can use that anger and sadness in a good way to motivate myself to initiate change and take some action. Now to research how I can help my community back in NM and what I can do here in CO.
