    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    Man, this is a tough question for me. But, my favorite meatless meal has got to be my family’s meat ball recipe… without the animal byproducts. In fact, my red sauce is probably top 5 best vegan dishes I can make however, I’m not willing to give out that recipe just yet haha. 

    The meatballs are simple. 

    You’ll need:
    2 lbs of beyond ground not beef 
    1 container of shredded vegan Parmesan (Follow Your Heart brand is good) 
    1.5 cups of bread crumbs (not seasoned, gluten free if ya wanna be) 
    1/2 bunch of curly Italian parsley (has to be curly, the flat leaf is no good, capeesh?)
    2 tbsp water 
    Salt
    Pepper
    Love

    Mix it all together. Roll it into balls a little bigger than Swedish sized meatballs. Fry them in a tiny bit of high quality EVOO. Fry until they’re a little brown, trust me. 

    Boom. Buon appetito! 

    Pair with TRUFF pasta sauce for extra 🧑‍🍳😘

    What was it like to practice mindfulness? If this is a practice for you already, what was something new you understood in practicing during Earth Month?

    To practice mindfulness is to be standing in your happy place at all times. To take in, appreciate, and give back to the fresh air found in that space... even when subject to standing beneath an oil refinery. For me, mindfulness is not just an action but rather a piece of my mind. A path I can choose to visit throughout any point of day, regardless of situationally derived circumstances.  This sacred platform has graced me with the opportunity to reconnect my body, mind and spirit, time and time again. Throughout moments of excruciating trauma, overwhelming bliss, and even seemingly mundane events such as SoCal traffic. It isn't always easy to access, however, especially if we've been a stranger. Sometimes, it requires direct and sudden reminders, such as this EcoChallege, and the resounding reassurance of our teammates to reinstate the vision of the trail markers we once left behind ourselves.

    I am borderline ashamed to admit the frequency in which I fall victim to the convenience of... The Paper Towel. Why sure, it may be Bounty's quicker picker upper, but I can't help but think of the impact its simple-minded use has on the environment I honor and cherish. From its production process (don't get me started on fossil fuels, let alone bleach application) to its delivery to retail stores (can you IMAGINE a semi truck full of paper towels) and then there's the wasted mind power of the creative marketing professionals behind it all... only to finally arrive at its sole purpose. To be twice as absorbent as the single use waste that came before. I mean, I suppose that could be beneficial, should the consumer be saving every corner to contain their man made mess but generally speaking - they aren't. Your girl here however, has previously invested in machine washable bamboo paper towels. And let me tell you, it was worth every side - eye. Because I was twice as conscious as the generation before. Because I debated whether I could use a different method of cleaning the surface in question. Now, beginning this month, I pledge to throw away the p-towel all together! This reflection, ecochallenge month, and team of Wyld men/women, encouraged me to do so!
