Mindful Eating

Each day, I will enjoy at least one meal without screens or distractions. During this time, I’ll focus on the taste, texture, and smell of my food. I chose this action to help reduce stress, reconnect with my body, and bring more presence to my daily routine. I want to better understand how mindful eating affects my well-being and overall relationship with food.

    Test Trial #3 — Seared Shrimp with Coconut-Lime Basmati & Garlicky Collards

    A nourishing plate that speaks in layers—

    zesty, creamy, earthy, alive.


    Shrimp marinated in lime, garlic, and chili—pan-seared to a tender finish.

    Basmati simmered in coconut milk and zest, fragrant and light.

    Collards sautéed slow, with lemon and garlic grounding the greens.


    This plate carries warmth and clarity—

    bright enough to awaken, grounding enough to restore.

    Baked Trout with Pickled Fennel & Brown Rice

    💪 🧘 🌾 (Naturally gluten-free)


    The grill may have been down—but the flavors showed up.


    Today’s trial brought a gentle pivot: the trout was baked to tender perfection, still infused with smoky spices and citrusy brightness. Paired with pickled fennel and grounding brown rice, this dish stayed true to its intention: comfort, clarity, and calm on a plate.


    Adapting with ease is part of the process—just like mindful eating itself.

    Today’s focus is on slow preparation with purpose.
    Fresh rainbow trout, citrus-pickled fennel, and a grounding brown rice base—swapped in for sorghum to keep things both practical and deeply nourishing.
    This dish is rich in omega-3s and calming minerals, crafted to support clarity, heart health, and a grounded sense of well-being.
    The rice will be made fresh the day of because timing—like flavor—is everything.
    Each step and ingredient is part of a more extensive, mindful, sensory-based cooking ritual.

    Tonight, I fully embraced my #MindfulEating goal for the Earth Month EcoChallenge. No screens. No distractions. Just the grounding aroma of warm spices, the crispness of roasted chicken skin, and the comforting sweetness of slow-roasted veggies.


    This Berbere-spiced chicken with caramelized root vegetables was more than just a meal—it was a moment of presence. Slowing down to truly taste each bite helped me feel more centered, more grateful, and more connected to my body.


    This isn’t just about food—it’s about nourishment on every level.

    I joined the Earth Month Ecochallenge to reconnect with my personal well-being in a way that also supports the planet. I’ve been working on managing stress, health, and sensory balance in my daily life, and I wanted to explore sustainable habits that support those goals. The challenge gave me a gentle, structured way to do that—without pressure.

    I chose actions that center mindfulness, sensory awareness, and daily rituals—like “Mindful Eating”—because they help me slow down, reduce stress, and connect with what nourishes me. These choices align with values I care deeply about: intentional living, self-care, and environmental mindfulness. I’m also quietly testing ideas for a wellness-focused dining concept I’m developing, so this challenge is a way to prototype and reflect, too.
