Enjoy a Meatless Meal
Producing 1 kg of beef emits as much greenhouse gas as driving 150 miles, meanwhile, 1 kg of veggies or grains leaves a much lighter footprint! This week, I’ll shrink my climate impact by having 1 meatless meals and/or 0 vegan meals each day.
Doing this Ecochallenge has been such an amazing experience, and I've really enjoyed learning from everyone. The biggest lesson I've learned here is that making an impact can be much easier than it seems, and we don't have to do everything at once. Each gentle step of the way makes a difference and even the little actions are worth it. I feel proud of the impact I and my team have made, and I definitely plan to join more challenges in the future!
I've been reading Go Gently by Bonnie Wright, and have been enjoying it very much. It's about her journey toward joining the climate movement, and she gives lots of tips and advice on how you can take gentle, achievable steps towards being more environmentally conscious in different areas of your life. It's a wonderful book, and I'd recommend it to anyone who is looking to be more environmentally conscious but isn't sure where to start. 🪻🌍
It's nice to see our fruit trees blossoming again! 🌸💮🍑🍎 We have two different kinds of peach trees and an apple tree, and they give such delicious fruit in the summer. It's been a while since the peach trees have blossomed, so it will be nice to have some fresh peaches again this year.
Here is the plant I adopted! It's a peace lily, and I've named it Luna. It hasn't bloomed yet, but I'll post a picture once it does. Peace lilies are native to Central and South America, but can be kept as house plants in lots of different places. I learned that they are actually one of the top plants for removing indoor air pollutants, so that's a big plus that I didn't even know about until today. I haven't had a houseplant in quite a while, so I'm looking forward to taking care of Luna and can't wait for her to bloom. 🌼
My favorite flowers are back in bloom! 💛 I know that people view dandelions as a weed these days, but that wasn't always the case. Dandelions used to be prized greatly for both their beauty and medicinal use. Their leaves are some of the most nutritious greens in the world, outperforming even kale and spinach. Dandelion flowers can also be eaten, and are used raw in salads, dried as tea, or mulled into dandelion wine (which I have never tried but hear is delicious). My personal favorite is dandelion tea, but my friend likes to make salads with dandelion greens. Maybe I will try that during this eco-challenge!
I'm really enjoying trying to work meatless and vegan meals into my diet. I've never been totally vegan or vegetarian, but I used to try to have one or two of my meals every day be vegan, and I kind of missed it. This eco-challenge is getting me back into some of my old hobbies!
