How does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet? What fruits or vegetables did you try this week, and which was your favorite?

Incorporating more fruits and vegetables into my diet has significantly improved my energy. I was also able to shed a few pounds by controlling my sugar cravings with fruit instead of candy. My favorite fruit through this challenge was apples. I replaced rice with cauliflower rice and cut down on my consumption of chicken and beef. Consuming less meat can reduce greenhouse gas being released by livestock, although my single effort will hardly make a difference. Consuming better food caused me to focus more on my work, while also providing energy to workout and socialize.

Living in an apartment, I don't have cold, filtered water from my refrigerator. Wherever I go, I have my water bottle with me. Instead of adding plastic water bottles to my grocery list, or drinking from my sink, I store filtered cold water in empty 2-liter bottles. Now I can reduce my usage of plastic waste and have cold water at all times.
