    Climate + Air Weekly Meal Planning
    How did it feel to plan out your meals and stick to them in an effort to reduce food waste?

    This week's meal plan includes a freezer clean out! Living alone I often make more food than I can eat in one sitting. I'll eat whatever I made for dinner the night I make it, and then for lunch the next day, and freeze the rest for a day when I don't feel like cooking. But I too often forget that I put stuff aside in the freezer. So last night I took an inventory of what was there and took a couple of items out to eat over the next couple of days.

    Breakfast is oatmeal with some dehydrated strawberries I've had for a while, walnuts, and some maple syrup. Lunch will be a veggie casserole that I was gifted a while ago, ate half of and then froze the rest, and dinner will be a bean soup that I'm making using some items from the freezer also.

    Hello everyone. I will be upfront that sometimes I struggle with over committing myself but this time around I think I chose Ecochallenge tasks that are actually achievable for me. Does anyone else struggle with this for this sort of thing?

    Hello! I love that this challenge helps me find concrete ways to take action. I decided to try the approach of choosing one action for each category. I made sure a couple of them were onetime actions so I'd not find myself feeling overwhelmed. The one I am looking forward to the most is sharing my why. I think it will challenge me to think about what motivates me to do this sort of work.
