I learned that the Confederated Tribes of Grand Ronde have purchased a large portion of land at Willamette Falls and will clean up this heavily polluted waterway to restore it back to when it was originally managed by the local tribes. Inspiring at so many levels! -

I reached out to schedule coffee with a woman for a course series for which we were partnered to discuss this past months topics. Even though I can't control if the schedules align, I feel very good about doing my part to ensure I follow the expectations of the program. -

When I eat fruits and vegetables my body feels cleaner because I am easily digesting the nutrients within these items. Any form of processed foods, once they move past my palette (where they often taste good) - feel very bad moving through my body. For example, I get a brain fog and pain when I eat too much wheat. Eating fruits and vegetables daily makes me feel in control of both my mind and body. -

I noticed resilience when I observed the woman who works in the college cafeteria keeping up with the customer demand upon her supply of baked salmon fillets. She began to tell us her approach to the salad bar is to gain inspiration from the whole foods market then come back to PCC and create similar recipes. I think she is very talented in the culinary arts and her ability to keep up with demand on each salad bar item is truly incredible! We have people come from other campuses just to try her salad bar! -

I am just beginning the journey of earth month ecochallenge 2026. Today I am going to observe resilience around me. Other days I might host a gathering, collect rainwater or plant seeds to grow food. Exciting!-
