Wasting food also wastes water, energy, and resources. I will keep a daily log of food I throw away during the Ecochallenge, either because it went bad before I ate it, I put too much on my plate, or it was scraps from food preparation, and commit to reducing my food waste throughout the challenge.

    2 weeks in! How is everybody doing?

    For me, while the vegan diet is easy (I'm already vegan), I've been struggling with some of my other goals: exercising and enjoying the outdoors. It's hard to do them both on a regular basis, but this challenge is motivating me to try!

    An average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money? What patterns did you notice in the food you threw away, and how can you address them?

    I notice that I often can't finish a loaf of bread before it goes moldy. This week I cut half of the loaf off and stuck it in the freezer to use as toast at a future date - hopefully this helps!

    I've been vegetarian for a few years and mostly plant-based as of 2025. There are certainly some challenges - I find breakfast to be a particularly difficult meal these days as someone who loves eggs - but I love feeling like I'm doing my part to help the planet!
