    Personally, it isn't difficult for me to avoid meat but I am pondering what vegan meals I could incorporate into my diet

      I personally love leaning on traditionally vegan meals, like chana masala and dahl, rather than trying to substitute vegan alternatives in non-vegan meals. Good luck, love that you're challenging yourself!
