    What is one invasive species in your region and how does it impact your region's ecosystem?

    I chose this action because I am aware of a few but thought I should learn more about combatting their existence in the area. The 'rabbit holes' I have fallen down have not provided much information however I intend to keep looking and plant some native plants in a small area of my yard.

    What was something you learned from your friends during Earth Month?

    I make an effort to speak with 2 people outside of my household daily. Typically one is family and one friend. I am happy to share "wins" with them and get them at least thinking of how they can make small decisions that will lead to big impacts.

    What surprised you about the two produce lists? How will you use these lists for your grocery shopping? Have you used these lists before?

    I have heard of the clean fifteen and dirty dozen foods. I decided to check in on my knowledge and found that an item I thought was clean is actually dirty. I try to purchase organic on many items and this one- spinach- will be organic moving forward.

    Sharing along a Colombian style recipe for lentils. Super yummy and easy to make vegetarian meal.
    ½ cup lentils
    1 ½ cups water
    1 small tomato, chopped
    1 small onion, chopped 
    2 teaspoons ground cumin
    1 teaspoon salt
    1 tablespoon vegetable oil
    2 small yellow potatoes, cubed

    Combine the lentils, water, tomato, onion, cumin, salt, and vegetable oil in a pot over medium heat; bring to a boil. Cook and stir at a boil until the lentils are soft, about 30 minutes. Add the potatoes and cook until the potatoes are tender, about 15 minutes more.
    Tip: I prefer to chop the vegetables very small, so that when they cook they blend with the broth.

    I am working to improve my active listening skills to ensure I am a better co-worker, partner, friend and family member.

    It was magical to spend my birthday with an outdoor beach outing and enjoying a vegetarian lunch. Sometimes I take for granted the beauties hiding in my state. Without nature we wouldn’t have the ability to enjoy this view; the peace, the tranquility of the sand on your toes, the salt water on your skin and the refreshing coastal breeze.

    Today I had the most successful morning meditation. I was able to focus entirely on setting my goals in my thoughts and tuned out any outside noise. The best part of my session is the gratefulness, where I list things I am grateful for, like having a great job, a home, food and health.

    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    My mom makes the best red kidney beans soup. She makes a recipe that she was taught by my grandmother, whom just passed away last week. It was bittersweet to have this meal just after her passing. I enjoy eating legumes as it is a great source of protein to replace meat. We combine it with a portion of rice and boiled or fried eggs are optional if you want to keep the meal vegan.

    What was it like to practice mindfulness? If this is a practice for you already, what was something new you understood in practicing during Earth Month?

    Quieting the mind is one of the hardest practices I have encountered. What I have found useful is focusing on something and appreciating its beauty. For example, when I sit in my backyard, I focus my mind on being grateful for the beautiful yellow butterflies that graze the green grass, hearing the chirping of the birds on the tree, or feeling the cooling breeze that refreshes the skin. Being in the very moment, focusing on the great things that nature blesses us with. Take a deep breath and come back.
    Practicing during Earth Month makes me more focused on protecting the land that brings me these peaceful moments.
