    In an effort to eat more meatless meals, I've been doing some vegetarian meal prep. This week, I made an insane amount of humms and also tried making babaganoush for the first time. Turned out great and very nutritious!

    I've started listening to more podcasts while I run or go about my day. Recently, I've been enjoying the TED Climate podcast, available on Spotify. I learned about SDG 7 as I listened to "How Wind Energy Could Power Earth ... 18 Times Over," which was a super interesting and fun episode. 10/10 recommend!
