    While I didn't check in every day, I was certainly more mindful and will continue to be after learning so much from this challenge. I've always been keen on conserving water and recycling, but learning more about my own carbon footprint and household's carbon footprint, my local watershed, and how great an impact just a couple more meatless meals a week can have, I'll strive to continually improve my impact on the environment around me and the world at large.

    I recently made a grain bowl with bulgur as the base that included roasted chickpeas and roasted red peppers, red onion, cucumber, tomato, dill, feta (optional), and harissa hummus, with a Greek vinaigrette. It was light, healthy, and thisclose to vegan (feta was not optional for me - I love it).

    The WFH policy has allowed me to greatly reduce my footprint since I was previously driving 40 miles each way to work, 5 days a week. This has been greatly reduced with the new policy. I also carpool almost everywhere with my fiancée since we do most things together. Saving up for our wedding has greatly reduced our superfluous spending, causing less waste.

    How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

    I've started composting to better utilize veg waste instead of putting it in the trash. My dogs are always eager to eat carrot peels or bits of other safe for them vegetables and fruits. I've also attempted to grow a new plant from avocado pits.

    For as long as I can remember I was interested in environmental issues. Growing up, we always recycled and saved water in my household, and as a Girl Scout, I learned to leave a place cleaner than I'd found it. In the years since, climate issues have become much more urgent and I've been a supporter of the Sunrise Movement, an organization by young people for their future.

    I plan to build a couple flower boxes from a pallet I have, and to make some seed bombs to scatter across my sisters' unused acres.

    I learned that most returned clothing items end up in a landfill instead of going back for resale. I will be more conscious about clothing purchases and stop myself from buying things that I can return if I end up not liking them. It's wasteful for my wallet and the environment.

    I'm going to learn about greywater systems and see about getting one for my house. I'll also look into getting a rain barrel to use for watering the garden once I get that planted this year.
