    What are the implications for a culture that spends most of its time inside and on screens?

    One implication is not knowing what is a local species and what is an invasive species. I use to see the English Ivy on all the buildings here in Portland, Oregon and I thought it was so pretty. Now, I know it is an invasive species that kills a lot of local plants, that negatively impacts the ecosystem. If I had not volunteered to pull English Ivy outdoors, I would never have known this!

    I can volunteer more outdoors. I have volunteered with Hoyt Arboretum, pulling invasive species and removing debris. I meet other people there, and the last time I volunteered, I brought a friend. This strengthens community bonds, helps the environment, and reconnects me to the outdoors.

    What was one of your most memorable volunteer experiences, and why? What would you like to volunteer for next, and why?

    One of my most memorable volunteer experiences was volunteering as a Leaf Bandit. A group of us in high school were in a community service club called Interact (it was Rotary for high school students). We went around the community and raked leaves for people who called in for assistance. It was so much fun, and when you have a group of 30+ people, it went very quickly. People were so appreciative, and neighbors would see us working and ask for help too. One woman was so grateful for the help, she wrote a letter to our school expressing her gratitude.

    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    The tastiest vegan meal that I made recently was Sweet Potato & Black Bean Enchiladas. As someone who loves cheese, I actually didn't miss it, because the enchiladas were so flavorful. It is from the Oh She Glows Cookbook by Angela Liddon (I recommend both her vegan cookbooks, I love them). I would also recommend Chloe Coscarelli, I own two of her vegan cookbooks, and they are great as well. For 2022, I challenged myself to make a new recipe every month, so I have been using my old cookbooks more.

    During the pandemic, I got used to buying Starbucks coffee and not bringing my to-go cup. I used my to-go cup again for this EcoChallenge, and it is so easy! I am also not buying single-use plastic from the grocery store. I have planned out my meals, so I do not have to rely on quick, grab and go dinners.
