    For me, creating new sustainability-related habits was learning about ways I could apply it to my routine at home. I've been getting a lot better about getting rid of single use plastic beverage wise. I made sure to purchase a reusable water bottle to fill each day. For coffee, I purchased a glass carafe and I've been brewing my own iced coffee!

    What is one way you will reduce your water use? What is a practice you already have that helps you reduce your water use?

    Taking the Water Footprint Calculator quiz was definitely eye opening. While I do my best to limit the amount of water I use a day, there is definitely a lot more room for improvement. One of the biggest ways I waste water is when showering. The tips given at the end of the quiz is something I'd like to apply. They recommend putting a bucket in the shower to catch water you waste while waiting for the water to get warm. This water can be used to water the plants or even for cleaning. 

    I have two practices in motion to reduce water usage when I shower. This involves shutting off the water when washing my hair as well as being mindful of limiting the time spent in the shower.

    Hey Team!! I am happy to see so many new team members for our EcoChallenge this month! We are just three days away from the halfway point. Don't forget to work on some activities and even post a reflection for additional points. 

    Myself like so many others understand that the days fly by and we're so busy working. Even if you didn't have time to complete a specific activity, log in and do a partial check-in! Reflect on your day. Maybe you actually participated in a sustainable activity and didn't realize it before!

    How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

    I'm a huge fan of soup because it can be such an easy meal to make from scratch with seemingly endless possibilities. It truly enables you to incorporate all parts of produce, product, poultry, etc. One of the tips I learned from watching countless hours of the Food Network is saving your vegetable peels to make stocks which can be the base of soup. I had some homemade stock in the freezer that I defrosted and added in spinach, bok choy, onions, carrots and even some leftover pasta! Simple, waste free and delicious.


    For anyone interested in looking more into sustainable cooking, there's a great cookbook that I recently purchased called, "Cooking with Scraps"!

    How can spending more time outdoors enhance your sense of place? Was there a new place in your region that was exciting to learn about and visit?

    I really loved the challenge to explore new places outdoors. Since moving from NY to Boston, I loved that I can pretty much walk anywhere by foot which was similar to when I lived in Brooklyn as a kid. Today, I walked a different route home where I found a little cobblestone sidewalk area with benches, some gorgeous old architecture and even a new coffee shop for me to try out! I'll definitely put this challenge into my daily routine and see what else I can find nearby.
