    My favorite vegan meal is a roasted chickpea and coucous bowl. I copied the recipe from my roommate's EveryPlate subscription and substituted sour cream for vegan plain yogurt.

    One single use item I use regularly is the plastic containers that are used to package mixed greens/spinach. Going forward, I will try and source this produce from local farmers markets and bring my own bag. I can also replace the greens with a different type of vegetable that comes plastic-free
