Shauna Donaldson 4/03/2023 9:23 AMHi team, I am pescatarian but primarily eat a vegetarian diet that includes vegan meals as well. I love trying plant based/vegetarian/vegan restaurants when we order out - I have small children so don't get to eat at the restaurants too much right now :) but I'm interested to know if anyone has any recommendations of their favourite spots in the Chicago area? Some of my favourites are Urban Vegan, Chicago Diner, places like Kumas Corner where you can sub burgers with an impossible/beyond meat patty, falafel places such as Middle East Grill and Bloom was a great restaurant to eat at with nice drinks too! My family and I tend to not have time to prepare elaborate meals during the week but have made an effort to try a new vegetarian/vegan recipe on Sunday's - this week we tried an easy vegetarian pasta bake which was delicious! Anyway, I just thought I'd share since this is a part of how I participate in the ecochallenge and wanted to know if anyone had any other suggestions for vegetarian/vegan meals!-
Terry Morgan 4/05/2023 12:37 PMShauna, I have many vegetarian recipes (and some vegan). A good source for recipes is a book called "The Engine 2 Diet", written by a former Texas firefighter, Rip Esselstyn. It's not necessarily a weight loss book but you will be healthier and maybe shed some pounds making the recipes he has collected. And he has good stories to go with them
. I love the salad dressings, desserts, salads and casseroles that are featured in the book. Happy to loan my copy to you sometime if you wanted to see it.
